Crunchy Kale Salad
Ingredients:
5 stalks kale, chopped
1/3 cup slivered almonds
1 handful dried cranberries
Optional: Sprinkle goat or feta cheese to finish.
Dressing:
1/2 squeezed lemon
1 tbsp Dijon mustard
1/4 cup olive oil
Salt/pepper to taste
2 tbsp honey
3 tbsp balsamic vinegar
Directions:
Whisk ingredients for dressing until you have a silky consistency.
Pour dressing over kale and toss.
