Gluten-Free Blueberry Oatmeal Scones with an Orange Zest!

11/2 cup almond, coconut or spelt flour (opt: to mix half and half)
11/2 cup gluten-free rolled oats
1/4 cup honey or coconut sugar
3/4 tsp baking powder
1/4 tsp salt
1/4 cup chia seeds
1/2 cup coconut oil
3/4 cup almond milk
1 egg
Zest from one orange
1 cup organic frozen blueberries
1/4 cup slivered almonds

Preheat oven to 425°F. Line a cookie sheet with parchment paper. Combine first 6 ingredients in large bowl. Mix together coconut oil, milk and egg in another bowl. Add to dry ingredients and stir until just moistened. Mix in blueberries, zest and almonds. Scoop 1/2 cup balls of dough and place on cookie sheet a few inches apart. Bake until light brown, about 15 minutes. Cool slightly on rack.
