Basil is an excellent source of Vitamin K. Walnuts are high in omega 3 fatty acids and garlic is know to have anti-viral/inflammatory properties. Top this pesto over a black bean spaghetti and you have a wholesome meal to serve, without any regrets.
4 cups fresh basil leaves
3 cloves of garlic
1/2 cup walnuts
zest and juice of one lemon
1/4 teaspoon red pepper flakes
1/2 cup extra virgin olive oil, more as you
1/2 teaspoon freshly cracked black pepper
1 teaspoon kosher salt
Add basil, garlic, walnuts, lemon zest, juice, and red pepper flakes to a food processor or blender. Blend till basil is completely chopped up.
In a steady stream add olive oil, pulsing until olive oil is blended into other ingredients and mixture turns into a paste. If your pesto is too thick, add additional olive oil until you reach the desired consistency.
