Here is a fun and easy recipe for Baked Avocado Fries:
1/2 cup whole grain flour or any flour available
1 egg (beaten)
1/2 cup whole grain breadcrumbs
1/4 cup parmesan cheese (optional – mix into breadcrumb)
Pinch of Cayenne
Coconut/Olive oil cooking spray
Cut avocado in half and make 1 inch slits. Scoop and separate the slices. Dip avocado slices in flour, egg and breadcrumbs. Rest slices on a baking sheet. Sprinkle salt, cayenne and spray oil on breaded slices.
Bake at 450 degree for 20 minutes or till golden brown. Best served out of the oven.
